ON THE GO
This is what I take to work for morning tea. Quick, easy and refreshing.
In a bowl combine oats, chia seeds, cinnamon and juice (or water). Add grated apple and mix to combine. Cover and refrigerate for several hours or overnight.
Add yoghurt, cranberries, pepitas and almonds, stir to combine. Top with assorted seasonal fruit and sprinkle with additional almonds and pepitas if desired.
¾ cup rolled oats
1 tablespoon chia seeds
1 teaspoon cinnamon
½ cup apple juice or water
1 apple, peeled and grated
½ cup Greek plain yoghurt
1 tablespoon cranberries
1 tablespoon pepitas
1 tablespoon flaked almonds
Raspberries, strawberries, blueberries,
kiwi fruit or other seasonal fruit
